Sticky Date Pudding with Butterscotch Sauce

STICKY DATE PUDDING WITH BUTTERSCOTCH SAUCE

INGREDIENTS
1 1/2 cups coarsely chopped dates
1 1/3 cups water
2 teaspoons bicarbonate soda
2 teaspoons cinnamon
80 grams butter
2/3 cup castor sugar
2 egg
1 1/2 cups self raising flour

SAUCE
1 cup brown sugar
200 grams butter
300 mls cream


METHOD
Combine dates and water in a small camp oven and bring to boil. Remove from heat and add soda. Stir and allow settling and then stir in cinnamon. Allow to cool. Cream butter and sugar in a bowl then gradually add eggs one at a time. Stir through sifted flour until well combined then add date mixture. Spoon mixture into well greased pan, place the pan on a trivet in a preheated camp oven and bake at 180C for 30 to 35 minutes. Check with a bamboo skewer to see if ready.

To make sauce combine butter brown sugar and cream in small camp oven, stir over heat without boiling until sugar dissolves. Simmer until sauce thickens.
