Pina Colada Bread Pudding

1 Loaf Italian bread, cubed
2 1/2 cups eggs beaten (12 large)
1 1/4 cups sugar
5 cups milk
1 Tab. vanilla extract
1/2 cup coconut Rum
1/2 cup coconut, shredded
1/2 cup pineapple, diced

Line 12in. deep D.O. with foil, and add bread cubes. Mix all the remaining ingredients together
and pour over the bread cubes. Press down on the cubes until they absorb most of
the liquid. Bake for 1hr. or until firm in thr center, serve with Coconut Creme Anglaise.

Coconut Creme Anglaise

1 1/2 cups heavy whipping cream
2 egg yolks
1/2 cup powder sugar (10X)
1/4 cup coconut Rum

Add the cream, egg yolks and sugar in a small skillet on med heat.
Stir constantly until the sauce starts to thicken, about 8-10 min.
Add the Rum and stir to evenly mix. Place in a container and set in
an ice water bath, then in cooler to chill.

Makes approx 2 cups.
