Beans & Rice

Beans & Rice

2 tsp vegetable oil
1 cup chopped celery
1 chopped onion
1 small chopped red bell pepper
2 Jalapeno peppers, seeded and finely chopped
16 oz can tomato sauce
15 oz can red beans
15 oz can black beans
14 oz can vegetable broth
1/2 cup uncooked long grain rice
1/2 tsp hot red pepper sauce

Instructions:
Heat oil in Dutch oven. at 325 degrees.
Add celery, onion, peppers.
Cook until tender, about 8 minutes.
Add all ingredients and mix well.
Bring to a boil.
Reduce heat.
Cover and simmer until rice is cooked, about 20 minutes.
*Can be made with Smoked Sausage or Ground Beef

I made this one in the house, too hot to go out side. Its very similar to a Cajun Hot Pot.

This was easy to make and very tasty. This will go into my camp cookbook.
