Roasted Potatoes

4 lbs. red potatoes, diced
2/3 cup olive oil
2 envelopes onion soup mix

Place all ingredients in large plastic bag and shake well to coat potatoes. Spread potatoes in 12" Dutch oven. Bake with 8 coals on bottom and 17 on top for 60 minutes, stirring occasionally, until potatoes are tender and golden brown. Prop the lid open the last 20 minutes—be careful not to get any ash in the pot!
