Breakfast Cornbread

Breakfast Cornbread

2 cups yellow cornmeal
1-1/2 cups flour
2 tsp. baking powder
1 tsp. baking soda
2 cups milk
1/4 cup butter, melted
1 lb. breakfast sausage
1 large onion, diced
2 cups cheddar cheese, grated
1 dozen eggs

Brown sausage in 12" Dutch oven. Drain fat, leaving approx. 3 Tbsp. Mix cornmeal, flour, baking soda, baking powder, milk, butter & sausage in Dutch oven. While stirring, beat in eggs, onions and peppers. Fold in cheese. Cook at 350 degrees (17 coals on top; 8 on bottom) until done. Approx 30 min.
