Cheddar Cheese Soup

Cheddar Cheese Soup

2/3 cup shredded carrot
1/4 cup chopped onion
1/4 cup (1/2 stick) butter or margarine
1/4 cup flour
2-1/2 cups milk
2 cups shredded Sharp Cheddar Cheese
1/2 cup beer
1/8 tsp. each: salt and pepper
Cook vegetables in butter in 12 inch Dutch oven over medium heat until tender, stirring frequently. Add flour; mix well. Gradually add milk, stirring until well blended. Cook until thickened, stirring constantly. Reduce heat to low (simmer).
Add cheese; cook until melted, stirring frequently. Stir in beer.
Cook until heated through. (Do not boil.) Stir in salt and pepper.
