Lebanese Meat and Rice

I've only tried this with ground turkey but it should be good with most any ground or finely chopped meat

2 each yellow onion, chopped
4 tablespoons butter or olive oil
2 cups rice
4 cups water
1/4 cup pine nut
3/4 teaspoon cinnamon
3/4 teaspoon allspice
1 teaspoon salt
2 pounds ground meat (lamb, turkey, beef)
1 tablespoon olive oil
1 clove garlic, minced
6 sprigs fresh cilantro

1. Lightly coat DO with butter or olive oil and brown ground meat. Set aside the ground meat

2. Add 1 tablespoon olive oil or butter to the DO, add chopped onion and garlic

3. Add rice, saute until rice is barely golden brown

4. add water, pine nuts, cinnamon, allspice, salt and ground meat. Cook over low heat until rice is done (about 30 minutes).

5. Serve, garninsh with cilantro sprigs.

Notes: Mint might work better than cilantro as a garnish, esp. if using ground/finely chopped lamb.
Marinated/spiced lamb chopped fine and sauteed is especially good.
